The “KHAAAAN” might have been out of character for Spock Prime, but not for the AU Sock; he almost beat Kirk to death in the last movie, so clearly this version isn’t as good at controlling his emotions. My only major gripe with the movie was that the way they saved Kirk was so badly telegraphed; it took a lot of the suspense out of the last twenty minutes or so because I already knew EXACTLY how they were going to bring him back.
As for McCoy, it’s not hard to imagine that he had a few hours (or days, I don’t remember) to poke around on the cryotube and learn at least the basics of how to operate the thing.
